Made these today. Very nice Alhamdulillah. Usually we can’t get the cookies to come out crunchy, but this did. Not very sweet, which we like. We modified this recipe we found and did this:
A little less than 1/2 cup caster sugar
2 cups self-raising flour
1 cup desiccated coconut
3/4 cup white chocolate chips
Preheat oven to 180 degrees Celsius.
Cream the butter and the sugar until pale and creamy.
Add the egg and mix until combined.
Mix in the salt, flour and coconut.
Lastly mix in the white chocolate chips.
Use a tablespoon and measure out a little less than a packed level spoon full of cookie dough. Take care to ensure the white chocolate chips are not on the outside of the cookie, as it could burn in the oven.
Flatten in your hands and lay on a baking tray lined with baking paper. Cookies don’t spread much, so you don’t need to leave much space. Bake for around 8-10min, or until the edges become golden brown.
Makes 40 biscuits.
