Cranberry Pistachio Oatmeal Cookies

Expired oatmeal and soon to expire cranberries…who knew they’d taste so good Alhamdulillah 😀

I wasn’t in the baking mood, so didn’t bother to take out the electric beaters, and just did everything by hand.

These taste really good warm from the oven. Plus, they are on the healthier side 🙂

Here’s the recipe:

Makes about 40 cookies.

Ingredients:

100g butter
1 cup sugar
2 eggs
1 tsp vanilla
1 1/4 cup rolled oats
2 1/2 cups all purpose flour
1 tsp baking soda
3/4 tsp ground cinammon
1/2 tsp salt
3/4 cup dried cranberries
1/2 cup pistachios

Directions:

In a large bowl cream butter and sugar till light and fluffy.

Add in vanilla and eggs and mix till combined.

Mix in oats, flour, soda, cinammon and salt till well combined.

If your cranberries are quite big like mine were, chop them up and add to the mix.

Blitz the pistachios up and add them to the mix.

Mix well then use a tablespoon to plop mounds onto your baking tray line with parchment paper. Bake for 10 minutes at 180 degrees C till golden brown.

Let cool on a wire rack.
