Our 2nd try at making a clafoutis…
For those of you who have never tried a clafoutis (cla-foo-tee) before, it’s like a fancy pancake.
First time round F used blackberries, I don’t think we took a picture 😦
We usually just eat the blueberries we buy with yoghurt and crumbled flake bar (try it, it’s awesome), but this time round the blueberries tasted a bit weird and kind of watery…so decided to bake them off.
When the clafoutis was done, the blueberries had exploded and there was a puddle of juice in the centre 😛 So didnt take a picture of the whole thing…so unglam 😀
Anyway, here’s how we do it:
5 tbsp sugar
2 tbsp cranberry vinegar (optional)
1/3 cup plain flour
1/3 cup ground almonds
Seeds scraped from 1 vanilla pod
2/3 cup yoghurt
Macerate the blueberries with the cranberry vinegar and 1 tbsp sugar for 30min.
Meanwhile, sift the flour and almonds (i just whisked…hee hee lazy).
In a separate bowl, whisk all the other ingredient, then whisk in the flour mixture.
Arrange the blueberries in a greased 9″ baking dish. Try to leave all the juice and cranberry vinegar in the bowl as you spoon the blueberries into the dish. Whisk in the remaining liquid into your batter.
Pour the batter over the berries and bake at 175 degrees C for about 30min till it’s puffed up and golden.
It’s nice served warm.
